What makes a good icebreaker?

Three things: it's easy to answer, it reveals something real (but not too personal), and it makes people curious about each other's responses. The best icebreakers make people laugh or go 'oh, interesting.'

How do I use icebreakers without it feeling forced?

Don't announce it. Just ask the question naturally, as if you're genuinely curious. 'Wait — are you more of a hehe or haha person?' lands way better than 'OK everyone, time for icebreakers!'
